Vegetable glycerine, also known as glycerine, glycerol or VG, is a thick edible liquid that belongs to the class of naturally occurring sugar polyols. This multipurpose, fragrance-free ingredient is widely recognised in the UK and EU as E number E422 and is used in both cosmetic and food industry. With a sweetness 70% of that of sugar, it serves many purposes including food applications, skincare products and e-liquids.
Food-grade glycerine plays a vital role as a humectant, thickener, emulsifier, solvent, and sweetener. It also enhances the texture and flavour of dairy products, confections, fondants, processed fruits, jams, and energy bars.
In Baking
When added into cake batter before baking it acts as a preservative ensuring your cakes remain irresistibly moist long after they leave the oven. Just 2-3tsp work great for one medium-large cake.
Ice Cream Texture
Ice cream benefits from glycerin as it acts as a humectant retaining moisture. This improves the texture making it easier to scoop and serving a softer consistency, particularly at lower temperatures compared to ice cream without glycerin.
Crystallisation Prevention
Adding a dash of glycerine when heating sugar and water at high temperatures prevents crystallisation.
Enhancing Confections
Glycerine gives a soft creamy consistency to buttercream or candies such as fudge, truffles, and caramels. When making royal icing a touch of glycerine provides a glossy finish and prevents it from hardening. Consider adding just 1-2tsp for every 500g.
