Hard-Scoop vs. Soft-Serve
Ice cream falls into two main categories: scoopable (hard-scoop) which is stored frozen, and soft-serve which is made fresh in a machine and cannot be stored.
Soft-serve ice cream is dispensed directly from commercial machines and is known for its light, airy texture. It is commonly sold in high-street shops, fast-food chains, seaside kiosks, Mr Whippy style vans, and mobile ice cream caterers. Soft-serve mixes are supplied in two forms: soluble powder which should be mixed with water before being poured into the ice cream machine, or UHT liquid which is pre-made and ready to use.
Drawbacks of Liquid Mixes
While common UHT liquid mixes eliminate one preparation step, they come with drawbacks:
• Cooked-milk flavour – UHT processing (Ultra High Temperature) heats the liquid mix to over 110°C during manufacturing, destroying delicate dairy flavours and resulting in a cooked, flat taste. Manufacturers often compensate by adding flavours, emulsifiers and other additives.
• Lack of flexibility – Liquid mixes have fixed formulations, preventing businesses from adjusting mix ratios to suit custom recipes and preferences.
• Shorter shelf life – They don’t last as long as powders, and once opened, their limited usage window leads to potential waste.
• Bulky and costly to transport – UHT mixes are significantly heavier and bulkier than powders (since they are mostly water), increasing transport and warehouse costs.
• Spoilage risk – They are more sensitive to spoilage, whereas powders are stable and also retain better nutrient stability over time.

Just Add Water
- Mix 1 part powder + 2 parts cool water (e.g. 1kg powder + 2L water). This ratio is recommended as a starting point, but you can adjust for a lighter consistency if preferred.
- Blend thoroughly with a stick blender or mixer until smooth.
- Pour into your soft-serve machine and process until ready.
