Lavender & Blueberry Ice Cream
One of the great things about making your own ice cream with a super ready mix, is that you can have so much fun with the flavours and experiment in your kitchen. Lavender and blueberries, or blackberries are a match made in heaven. The fruit sweetens up our new No Sugar Added Solice ice cream, with a fresh and fruity flavour whilst the lavender gives it great depth. Make sure you use culinary lavender though!
Recipe
Serves: 12 (as a scoop with other dessert)
Prep time: 30-40 minutes
Freeze time: 5-6 hours
Ingredients:
1 pack Solice No Sugar Added ice cream ready mix with vanilla flavour
550ml fresh semi-skimmed milk
10-15g culinary lavender buds
100g blueberries or blackberries
10ml water
Method:
1. Put 10ml of water, your berries and lavender buds into a saucepan over a low heat. Stir slowly, trying to squash the berries and buds a little as you stir. You want the flavour and colour to seep into the mix. Do not allow to boil or burn. This should take you around 5 minutes.
2. Strain off the mix through a sieve to a large bowl to remove most of the fruit and lavender buds. You can put some of the berries back into the mix if you want, but not the lavender.
3. Pour the semi-skimmed milk into the bowl.
4. Add the contents of the Solice bag gradually and whip at the same time for 3 mins. Your mix should have turned a light lilac/purple.
5. Place in the freezer for 1 hour.
6. Remove from freezer and whip for 4 mins at maximum speed.
7. Freeze for 5-6 hours until the ice cream is completely set. Serve in a cone, wafer or small bowl with extra fresh berries.
