Honey Roasted Peaches with Rose Flavoured Ice Cream

This is a lovely dessert for everyone, young and old. You can use other soft fruit such as nectarines, apricots, figs, plums, depending on the season. With a dash of honey, and delicious Solice Ice Cream flavoured with a dash of rosewater, both taste and aroma are supreme. Finishing the dish with a topping of chopped pistachios gives the dessert a Middle Eastern flavour.

Freeze time: 3-5 hours

Ingredients:

1 pack Solice No Sugar Added ice cream mix powder with vanilla flavour

1 pint fresh semi-skimmed milk

6 ripe peaches

30g butter

Finely grated zest of 1½ lemons, plus 3tbsp juice

6tbsp clear honey

40g flaked almonds

1tsp ground cinnamon

4tsp caster sugar

1½tsp rosewater

 


Method:

1. Mix up your packet of Solice 0% Sugar Added with a pint of milk, and two drops of rosewater. Whisk thoroughly following the instructions, then place in your chosen container and freeze for 4-6 hours.

2. Heat your oven to 200°C / Gas Mark 6

3. Cut the ripe peaches in half (remove stone) and place in a baking dish, skin side down. Portion the butter into the stone cavity, sprinkle with lemon zest, followed by the juice and the honey. Place in the oven to bake for around 20-25 minutes – they should appear soft and tender and going slightly golden around the edges.

4. Top each peach half with a scattering of almonds (or half almonds, half pistachios) and sprinkle some cinnamon and a little more honey over each.

5. Serve with a scoop of Solice ice cream for a really yummy dessert.
