Strawberry & Chocolate Chip Cookie Ice Cream Sandwich

You won’t stop wanting to eat these! Lovely ice cream sandwiches made with chocolate chip cookies and chopped strawberries are a lovely treat in any weather. You can make your own cookies, or buy some from your local supermarket, it’s up to you.

Serves: 10-12

Prep time: 25 minutes (if using shop bought cookies)

Freeze time: 3-5 hours

Ingredients:

1 pack Solice Ice Cream Mix Vanilla Flavour

1 pint fresh semi-skimmed milk

20-24 large chocolate chip cookies

75g strawberries, hulled and chopped into small pieces

 


Method:

1. Make up the Solice Ice Cream mix as per packet instructions. Pop into the freezer.
 
2. Towards the end of freezing time, cut up the strawberries into small pieces, cover and place in a bowl in the fridge.
 
3. Lay out half your cookies on a tray. When you are ready, take your ice cream out of the freezer and scoop out enough ice cream to form a 2cm layer on the top of the cookies. Add a sprinkling of strawberries, then place the other biscuit on top. Press down lightly (to avoid breaking the biscuit!) so that the ice cream oozes slightly to the edges. Smooth off and serve quickly!
