Fruit and Nut Choco-Bars

You can make these in a large rectangular tray or mould, or even use lolly moulds and some sticks! This is an easy recipe which you can make up into bars once you cut up the mix in a tray. That way, you always have something choco-delicious ready for the kids to eat. You obviously need a tray that will fit into your freezer, so bear that in mind. You can increase the amount of fruit and nuts if desired, but bear in mind dried fruits can contain a lot of sugar.

 

Recipe

Serves: Approx. 12 bars

Prep time: 15 mins

Ingredients:

1 pack Solice Chocolate Ice Cream Mix Powder (prepare as per manufacturer’s instructions)

100g nuts of your choice, such as chopped walnuts, hazelnuts, peanuts

40g small size (or chopped) dried fruit, such as sultanas or even a mixed selection

 


Method:

1. Make up your Solice Chocolate Ice Cream by following manufacturer’s instructions on the packet. Once whipped, sprinkle over half the fruit and nuts, then freeze for 1 hour. Remove after 1 hour and whip again.

2. After the second whipping, sprinkle over the remaining fruit and nuts, then freeze again, as per packet instructions. This is when you will need your lolly moulds to freeze the ice cream in. Otherwise, use your tray.

3. When ready to eat, cut into rectangular bars and serve. You could also use these in ice cream sundaes or similar desserts.
