Mixed Berry Semifreddo
This is a lovely summer dessert, packed with a mixture of berries and our sumptuous ice cream. You can serve this with shortbread, waffles or wafers, even extra berries or a different fruit. It’s an impressive dinner party dessert, but works just as well as a super family ice cream with healthy berries. If you love the taste of mint, just add some finely chopped mint to the ice cream mix.

Ingredients:
1 pack Solice Ice Cream Mix Vanilla Flavour
1 pint fresh semi-skimmed milk
200g strawberries, hulled and chopped into different size pieces
150g raspberries
100g blueberries
6 mint stems, leaves removed and finely chopped (if desired)
Equipment:
You will need 1 pint, a large bowl, and an electric mixer. Also for the ice cream shape, a large loaf tin lined with cling film that is smoothed against the inside edges, and with a couple of inches overlap to pull the finished semifreddo out of the tin.
Method:
1. Make up the pack of Solice ice cream mix as per packet label. Freeze for around 1½ hour, then remove from freezer. Whisk the ice cream again for 4 minutes. Quickly toss in your berries, and give the mix a quick spoon round, so that the fruit is as evenly dispersed as you can. If you want to add mint, you can do so now.
2. Transfer mix from your mixing bowl into the loaf tin. Any remaining mix can be frozen separately for future use. Put back into the freezer until frozen to the correct consistency. When ready to serve, cut the semifreddo into slices and put each one on a plate.
3. Decorate with extra berries, a sprig of mint and serve with shortbread or waffles etc., or a lovely berry coulis.
