Easy Pancakes with Strawberries & Chocolate Ice Cream
A delicious simple dessert, served with our rich no sugar chocolate ice cream, and healthy strawberries. You can use any fruit you wish, more berries or something like sliced fresh peach or mango. It’s all so tasty! Naturally occurring sugars make this dessert low in calories.

Serves: 6-8 (makes approx 12 pancakes)
Prep time: 25 mins including cook time (for the pancakes)
Ingredients:
Make sure you have your packet of No Added Sugar Solice Chocolate Ice Cream and everything else you need to make it!
150g plain flour
2 extra large eggs
450ml semi-skimmed milk
1tbsp sunflower oil or vegetable, plus extra for frying
Pinch salt
150g strawberries (more if you wish)
Method:
1. Make up your ‘No Sugar’ Solice Chocolate Ice Cream according to manufacturer’s instructions, making sure you do give it 2 whips for more volume.
2. Using a large mixing bowl, sift in the flour and salt. Make a well in the centre, crack in the two eggs. Add a little of the milk (about 50ml) and the 1tbsp of oil. Whisk from the centre, working your way through the flour as you go, to combine. Continue to add the remainder of the milk until you have mixed everything thoroughly. If the batter is too thick and stiff, continue to add more milk until it is just like a medium but pourable batter. It should be somewhere between single and double cream in thickness.
3. Take a large frying pan and add a little oil. Heat slightly, then wipe round the pan with kitchen paper – you don’t want too much oil in there. Keep the paper to use again.
4. Ladle or pour some of the mixture into the warm pan and moving quickly, swirl it around to cover the base of the pan and make an even pancake. Leave to cook for around 30-45 seconds, and using a palette knife, lift one edge gently. It should be a lovely golden colour on the underside. If so, flip it over quickly to cook for another 30 seconds on this side.
5. Tip the pancake onto a warm plate and place a piece of parchment or greaseproof paper over it to keep it warm. Repeat the process until you have all the pancakes you need.
6. Top with strawberries and a lovely scoop or 2 of your delicious Solice chocolate ice cream.
A super dessert – if you want to make it even more healthy, try using wholemeal flour.
