Erythritol is a versatile sugar substitute that has zero calories per serving and is produced through a fermentation process that begins with plants such as corn, sugar beets, and potatoes. Erythritol can be also found naturally in some fruits like pears and grapes. Because it is plant-based and sugar-free, it has become one of the most popular sugar substitutes worldwide.
Granulated (table) erythritol is similar in size and texture to common granulated sugar and it can be easily measured and added to recipes where sugar would be used. It’s about 65% as sweet as sugar, and has a zero glycemic index making it perfect for the ketogenic or any other low-carb diet.
The taste of this sugar replacement is clean and sweet and it is accompanied by a mild cooling sensation at the front-end of the taste experience. Unlike some other sweetening agents, it does not leave an aftertaste allowing the initial taste sensation to fade away smoothly. Uses

Baked goods and confectionery: A popular ingredient for no added sugar baking, sugar-free candies, gum, mints, creams and desserts. It can be used in many recipes at a 1 : 1.5 sugar to erythritol ratio. It is also perfect to make sweet glazes for baked goods. Simply combine erythritol and liquid (such as water or milk) in a small saucepan and heat until the erythritol is dissolved.
