Unlike most whipped ice creams that contain non-dairy fats like palm oil and added emulsifiers, Onero® mixes use only dairy milk fats. Thanks to their 32-35% full-cream milk powder content, they bring a luxurious taste and texture.
Advantages of Mixes in Powder Form
Soft-serve ice cream is dispensed directly from commercial machines and is known for its light, airy texture. It is commonly sold in high-street shops and takeaways, seaside kiosks and mobile ice cream caterers such as Mr Whippy-style vans. Soft-serve mixes are supplied in two forms: UHT liquid which is pre-made and ready to use, or soluble powder, such as our Onero® mix, which should be mixed with water before being poured into the ice cream machine.
While common liquid mixes eliminate one preparation step, they come with drawbacks. UHT processing (Ultra High Temperature) heats the liquid mix to over 130°C during manufacturing, which destroys delicate dairy flavours and often results in a cooked, flat taste. To compensate, some manufacturers tend to mask with flavours and other additives. Liquid mixes also have fixed formulations preventing businesses from adjusting mix ratios to suit custom recipes and preferences. Once a liquid mix is opened, it has a limited usage window leading to potential waste. They are also significantly heavier and bulkier than powders, increasing transport and warehouse costs, while their sensitivity to spoilage makes them less stable compared to powders, which also retain better nutrient stability over time.

Just Add Water
- Mix 1 part Onero® powder + 2.2 parts cool water (e.g. 1kg powder + 2.2L water). This ratio is recommended as a starting point for a rich creaminess, but you can add more water for a lighter consistency if preferred.
- Blend thoroughly with a stick blender or mixer until smooth.
- Pour into your soft-serve machine and process until ready.
How Much Does It Make?
Every 1kg of Onero® powder yields between 3kg to 3.5kg of soft serve mixture.
